Sea Level Ingredient Amounts

  • 4 ounces semi-sweet chocolate, chopped
  • 8 ounces butter
  • 5 ounces all-purpose flour
  • 14 oounces sugar
  • 4 eggs
  • 1 teaspoon vanilla

9,000 Foot Elevation Ingredients

  • 4 ounces semi-sweet chocolate, chopped
  • 6 ¾ ounces butter
  • 6 ounces all-purpose flour
  • 12 ¼ ounces sugar
  • 9 ½ ounces eggs

Baking time per recipe: 25 minutes. Actual baking time at 9,000 feet: 25 minutes.

1. Preheat oven to 325 degrees. Line 24 muffin cups with paper liners. In the top of a double boiler, combine chocolate and butter. Heat, stirring occasionally, until mixture is melted and smooth. Remove from heat and allow to cool to lukewarm.

2. Sift flour and sugar together into a large bowl. With mixer on low speed, beat in eggs one at a time. Stir in chocolate mixture and vanilla. Fill muffin cups 2/3 full.

3. Bake in the preheated oven. Do not overbake. Tops should be shiny but give slightly when touched.
