Sea Level Ingredient Amounts

  • 8 ounces unsalted butter
  • 16 ounces granulated sugar
  • 4 ounces eggs
  • 8 ounces buttermilk
  • 1 5/8 ounces cocoa powder
  • 12 ½ ounces all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 8 ounces water

9,000 Foot Elevation Ingredients

  • 6 ¾ ounces unsalted butter
  • 14 ounces granulated sugar
  • 4 ¾ ounces eggs
  • 10 ½ ounces buttermilk
  • 2 ounces cocoa powder
  • 15 ounces all-purpose flour
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 10 ½ ounces water

Sea Level baking time per recipe: 30 to 40 minutes.
Baking time at 9,000 feet: 38 minutes.

1. Preheat oven to 350 degrees. Line bottoms of 2 – inch round cake pans with parchment paper. Sift together cocoa powder, flour, baking soda and salt. Set aside.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Alternately beat in the flour mixture and the buttermilk, mixing just until incorporated. Add the boiling water and beat for one full minute.

3. Bake in the preheated oven until top springs back when lightly touched.
